I came up with this because one day shopping at Safeway in the Deli Department I noticed a Turkey Salad they were making. It looked delish so I bought a pound to try.
You know... it was pretty good. I enjoyed it. But, I thought... I can make it A LOT better!
So this is what I came up with from my left over turkey last week.
I like to eat mine on toast as pictured here, but it would be great on croissants, sandwiches, crackers, etc.
Ingredients ~
1 pound turkey shredded or chopped
1 cup chopped pecans
1 cup craisins
1 Golden Delicious Apple chopped
2 cups left over stuffing if you have it, otherwise whip up a Stove Top box of turkey stuffing.
Approximately 2 cups REAL mayonnaise.
(Don't use Miracle Whip)
Salt and pepper to taste
Mix all the ingredients together.
Now... These are all approximate measurements. I myself love stuffing so I would add a little bit more. When I put this together I went by if I wanted a little more of this or that. I didn't measure anything. If it comes out a little dry add more mayonnaise. Always start with the smaller measurements first. You can add more as you go.
I have to tell you... this is soooo delish. Even if you don't have leftover turkey go to your deli and buy a turkey breast or cook one yourself.
