1 C. butter
2 C. sifted All Purpose flour
2 Tbsp. white sugar
1 C. ground almonds
Fruit sugar
Cream butter and gradually add flour. Mix thoroughly.
Mix in sugar and almonds.
Form into 'logs' by rolling in hands. (approx. 2 inches long x 1 inch thick, thinned to a rounded point at each end).
Bake at 325F for about 20 minutes, or until just golden. Watch closely so as not to burn.
Remove from oven and allow to cool until cool enough to handle. Gently roll in fruit sugar to coat.
Makes 2 to 3 dozen.
Image is similar in shape, you could make into crescents if you wanted.
Idea:
Instead of rolling in sugar, you could dip half in melted chocolate if you want to get a little more 'decadent'!
Recipe from Marj McKinnon.
These were my favourite Christmas cookie growing up. My mom made then every Christmas.
