Makes 6 servings.
12 large eggs
1 cup skim milk
2 tablespoons chopped fresh parsley
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
6 ounces Canadian bacon -- cooked & diced
6 Nature's Grain Lite English Muffins*
prepared Hollandaise sau
Preheat oven to 350°.
In a large bowl whisk together the eggs, the skim milk,parsley, salt, garlic powder & pepper.
Coarsely chop the English muffins and the Canadian bacon and place in a 2 quart casserole or 9x13 inch baking dish.
Pour egg mixture over top; let stand for 5 minutes.
Bake until puffed and set, about 40 minutes.
Serve with 2 Tbsp. Hollandaise sauce per serving.
