Ingredients:
• 1.5 lbs any variety Little potatoes, thinly
sliced
• 1/4 cup butter or margarine
• 1 tsp garlic, minced
• 1/4 cup all-purpose flour
• 2 cups 1% milk
• 1/2 tsp salt
• 1 cup cheese, shredded
Directions:
1. Lightly spray an 8"x 8" pan with non-stick spray and preheat oven to 350°F. Spread sliced potatoes evenly in the pan.
2. In a medium pan, melt the butter over medium heat. Add garlic and cook one minute. Gradually whisk in flour until a paste forms.
3. Add milk and salt and cook over medium heat, whisking frequently, until thickened. Remove from heat and stir in 1/2 cup cheese (adjusting salt to taste if necessary).
4. Pour sauce over sliced potatoes and sprinkle with remaining 1/2 cup cheese. (To make ahead, simply cover with tin foil or plastic wrap and place in the refrigerator for up to 24 hours, then bake when ready).
