Ingredients
3 lbs. Pig tails, tail ends removed
sauce:
1.5 tsp salt
1/3 tsp fresh ground pepper
1.5 tsp paprika
1.5 tsp dry mustard
1.5 tsp brown sugar
1.5 Tbsp. Worcestershire sauce
3/4 cup chili sauce
3/4 cup water
1/3 cup cider vinegar
2/3 very finely chopped onion
2 cloves garlic, minced.
Substitutes not recorded in nutritional count :
White sugar, honey or molasses for Brown Sugar
Ketchup for chili sauce
Directions
Place pig tails, fat side up on a rack in an open roasting pan.
Bake 2 hours at 300 degrees F
Drain off the fat.
Combine the ingredients for the sauce and simmer for 10 minutes
Lay the pig tails in the bottom of an open roasting pan.
Spoon over some of the sauce not all.
Return to oven and continue cooking for another hour.
Spoon more sauce periodically so that they are well coated.
To BBQ, pre roast in oven as directed.
Lay pieces on the grill, paint with sauce and grill till succulently brown and crisp, turning and brushing on more sauce periodically.
