Ingredients
1 pound of shrimp (get the medium sized ones, not the tiny ones)
1 1/2 of crab meat or scallops
1 small onion
1 yellow bell pepper
1 red bell pepper
3 eggs
1 cup of Italian bread crumbs
2 tablespoons of season salt
1 tablespoon of garlic powder
1 tablespoon of Old Bay seasoning
1 teaspoon of red pepper
2 tablespoons of olive oil
directions
1 First and foremost, set your oven to 325 degrees and grease your loaf pan with either butter or olive oil.
2 Dice the onion and the peppers and if your shrimp aren’t peeled, go ahead and do that too.
3 Once your veggies are diced, pour the two tablespoons of olive oil into a medium sized pan or wok on the stovetop and turn the flame onto a medium temperature. Once the pan is heated, sauté the shrimp first for about 5 minutes, constantly moving them around and then add the peppers and onions. Sauté the peppers, onions and shrimp for a total of 10 minutes. Let the peppers, onions and shrimp cool for another 10 minutes off the flame.
4 Next, dump the 1 1/2 pounds of crab meat into a large mixing bowl and add the peppers, onions and shrimp to it.
5 In a small bowl, beat the 3 eggs and pour that over the mixture in the large bowl. Kneed the mixture until everything is evenly mixed in and then add the cup of bread crumbs, season salt, garlic powder, Old Bay and red pepper. Then knead everything again until the ingredients are evenly mixed.
6 Once everything is all mixed in, you can dump the ingredients from the large bowl into your loaf pan.
7 Cover the loaf pan with foil and place it into the oven to bake for 35 minutes. After that, uncover the loaf pan and bake the meatloaf for another 15 minutes, constantly checking it. The last step is to give the meatloaf a nice, even, golden brown look!
8 Once your seafood meatloaf is done, stand back because this recipe is guaranteed to cause a stampede in your kitchen. This dish is best served with asparagus and creamed corn.
