Yield: 24 squares
Ingredients
Rice Krispies Treats:
4 tablespoons (1/2 stick) butter
1 (10 oz.) bag miniature marshmallows
1 1/2 teaspoons vanilla
2/3 cup orange cake mix (I used Duncan Hines Orange Supreme Cake Mix)
6 cups Rice Krispies cereal
2 cups (12 oz. package) white vanilla baking chips
Icing:
2 cups powdered sugar
4 tablespoons (1/2 stick) butter, softened
1/4 teaspoon vanilla
1/4 teaspoon orange extract
3 to 4 tablespoons orange juice
Peach gel food color (or yellow and pink)*
Directions
1.Spray 13x9-inch pan with non-stick cooking spray.
2.In large pot, melt butter over medium-low heat. Add marshmallows and stir to coat. Continue stirring until marshmallows are melted. Remove from heat.
3.Add vanilla; stir. Add orange cake mix and mix well. Add Rice Krispies and vanilla chips. Stir until cereal and vanilla chips are well coated (vanilla chips will melt slightly).
4.Using a large buttered spoon or spatula, spread and press mixture evenly into prepared pan. Cool completely.
5.In medium bowl, combine all icing ingredients except food color and stir until smooth. Dip a toothpick into the food color and then swirl it into the icing; stir well. Add color a little at a time until the desired shade is achieved, stirring after each addition of color (use a new toothpick each time you add color). Once desired shade is reached, spread evenly over top of Rice Krispies Treats. Let stand for about an hour or until icing is set. Cut into squares.
Notes
*I used yellow and pink gel food color to tint my icing. I put a small amount of each color on a piece of wax paper and added each color a little at a time with a toothpick until I got a pretty peach color.
