Serves 4-6
2 pork tenderloins
2 shallots, minced
4 garlic cloves, minced
Olive Oil and Sesame Oil
2 tablespoons red wine vinegar
1/3 cup plum sauce
1/3 cup hoisin sauce
1/4 cup soy sauce
2 tablespoons brown sugar
honey to coat tenderloin with (about 1/4 cup or so)
Saute the shallots and garlic in 1-teaspoon olive oil and 1/2 teaspoon sesame oil, for 2 minutes. Stir in vinegar, plum sauce, hoisin, soy and brown sugar. Cook, stirring occasionally for 5 minutes. Remove from heat and let cool.
Pat each tenderloin dry of any moisture. Take pork tenderloins and saute in a frying pan in a little oil on all sides until nicely browned. Remove tenderloins and when you can touch them rub with honey. Then rub the sauce on the pork so it is really covered. Let cook in a pre-heated 375 degree oven for 30 minutes. When done remove and let stand 10 minutes before slicing.
This is great on ribs, pork chops, rack of lamb, and a whole roasting chicken.
