from my Mom.
Ingrediants:
1 can mushroom soup (can be low fat type)
2 lb. ground beef (I use lean)
1 pkg. onion soup mix
1/2 C dry bread crumbs
1 egg, beaten
1/4 C. water (for gravey)
Directions:
In a large bowl, mix the ground beef, 1/2 C. mushroom soup (this equals half the can), onion soup mix, bread crumbs and the egg. Shape the mixture into a 4 x 8 loaf and place into a greased 8 x 12 loaf pan.
Bake at 350F for 1 & 1/4 hrs., or until done. Spoon off drippings and reserve. Cover with foil and let sit for a few minutes. In a saucepan mix water, remaing soup and the drippings. Heat on med. till boiling, stirring occasionally. Thin with a little more water if necessary. Slice the meatloaf onto plates and spoon the gravey over the meatloaf and mashed potatoes (if having).
(I usually get the soup and water ready in a pan so that it is waiting for the drippings at the end. Sooooo Good!!)
