Ingrediants:
Stuffing
3 or 4 boneless, skinless chicken breasts
3 or 4 pieces of bacon (to equal number of breasts)
Directions:
Prepare a stuffing (like you would use to stuff a whole chicken) – torn up bread, diced onion, diced green pepper, and spices.
Place chicken breast between a folded over piece of plastic wrap and pound it out to a flat fillet.
Place dressing down the middle of the piece, roll up chicken from one end to the other. Wrap a piece of bacon around the roll and secure with a toothpick(s).
Place on a baking rack on a baking sheet and cook in the oven at 350F for 30 to 45 minutes, until the bacon has crisped and the chicken has cooked.
