Mom's Meatloaf with Mushroom Soup Gravy.
1 can Cream of Mushroom soup
2 lb. ground beef
1 pkg. dry onion soup mix
1/2 cup dry bread crumbs
1 egg, beaten
1/4 cup water
Directions:
In a large bowl mix the ground beef with 1/2 can of the mushroom soup, the onion soup mix, bread crumbs and the egg. Combine and shape the mixture into a 4 x 8 loaf and place into a greased 8 x 12 loaf pan.
Bake at 350F for 1 and a quarter hours, or until done. Spoon off drippings and reserve. In a saucepan, mix water and remaining soup, add in drippings and heat on medium until it starts to boil. Stir occasionally. (Thin with more water if needed). Spoon gravy over meatloaf and potatoes to serve.
