Apple and Pecan-Stuffed Pork Chops

Preparation Time: 30 Minutes
Ingredients
4 Canadian Pork chops, at least 1-inch thick
2 tsp (10 mL) vegetable oil, divided
1 medium onion, finely chopped
1/4 cup (50 mL) Granny Smith apples, peeled, cored, and sliced
2 tsp (10 mL) minced garlic
1/2 cup (125 mL) fresh breadcrumbs
1/2 cup (125 mL) chopped pecans
1/4 cup (50 mL) chopped parsley
1 Tbsp (15 mL) chopped fresh sage, or 1 tsp (5 mL) dried
1 Tbsp (15 mL) Dijon mustard
Cooking Instructions
With a small sharp knife, cut a small incision horizontally in the fat side of the chop. Work the knife around to make a pocket large enough to accommodate the stuffing.
Heat one teaspoon oil in a skillet over medium heat; fry onions and garlic until onions are soft. Add diced apples and cook for another minute.
In a mixing bowl, combine breadcrumbs, pecans, parsley, sage, mustard and remaining 1 tsp. oil; add onion mixture and stir well.
Divide mixture into four and stuff the chops. Pre-heat grill or barbecue to medium. Grill chops until cooked to medium, about 12 minutes total.
