Goofy’s Kitchen at the Disneyland Hotel has been serving a famous peanut butter pizza for years. OC Moms was invited to meet chef Alle Thiam at a recent holiday event, who generously offered his secret recipe to our readers.
Chef Alle Thaim has worked at Disneyland for six years and enjoys introducing the guests of the Disneyland Resort to a coastal cuisine style in his dishes.
Goofy’s Peanut Butter Pizza
Makes two 10-12 inch pizzas
* 3/4 cup warm water
* 1 package (2 1/4 teaspoons) active dry yeast
* 1 teaspoon honey
* 2 1/2 cups all-purpose flour
* 1 teaspoon salt
* 1 tablespoon extra virgin olive oil
* vegetable cooking spray
* 1/2 cup peanut butter (or Sunbutter for allergies)
* 1/4 cup grape jelly
For pizza dough
1. Place warm water in a small bowl; add active dry yeast and honey and stir to dissolve. Set aside for five minutes.
2. Combine flour and salt in a stand mixer fitted with a dough hook. Add the olive oil and yeast mixture and continue mixing on low speed for at least 5-7 minutes or until dough pulls away from the side of the bowl and forms a smooth, sticky ball. If the dough is too wet and doesn’t pull away, gradually add more flour until it does.
3. Transfer the dough onto a clean work surface, lightly dusted with flour. Cut ball into two equal pieces. Sprinkle each piece with flour and gently form each one into a ball. Dust your hand and work surface with flour as needed. Knead by hand for 2-3 minutes, or until dough is smooth and firm.
4. Spray two large mixing bowls with vegetable cooking spray. Place one dough ball into each bowl. Turn dough around so it all gets coated with vegetable cooking spray and cover with plastic wrap. Set aside for one hour in a warm place and allow dough to rise.
5. Preheat oven to 350. Punch dough down to deflate. Transfer each dough ball onto a clean work surface, lightly dusted with flour. Flatten dough working from the center out, using your fingers and the palm of your hand. Turn and stretch dough until it cannot stretch further. Allow dough to rest for five minutes and continue stretching until dough is approximately 10-12 inches in diameter. Build up edges slightly by pinching the edges.
6. Spray two 12-inch pizza pans or baking sheets with vegetable cooking spray. Transfer dough onto pizza pans and bake 8-10 minutes or until browned.
For pizza topping
1. Melt peanut butter (Sunbutter) and jelly in two separate bowls in the microwave for 15 seconds.
2. Remove pizzas from oven. Spread peanut butter over hot crust with a spatula. Place the warmed jelly in a squeeze bottle. Squeeze a small circle of jelly in the center of the pizza. Continue making larger curcles working your way to the outside crust and forming a “target” pattern.
3. Gently pull a knife across the jelly circles working from the crust to the center of the pizza to create pattern lines. Bake pizza for another 2-3 minutes.
(**For children with allergies, you can substitute Sunbutter for the peanut butter for and change the dough to a gluten-free crust)
