As you have mentioned, it looks like the MAF data can not be trusted.

Is there any fault codes?
Can you scope the MAF and see what is really going on?

Scope the MAF and check it is functioning, disable/ blank the EGR and repeat your test....
My first impression from your post though is a blocked/partially blocked exhaust.

Is turbo functioning correctly.
