I'm pretty sure if you disconnect the switch, providing the wiring is sound, it will default to a closed bonnet.
I have had some where the wiring rubs through on the side of the engine block or in the metal retaining clip for the harness. Most of the time though it is the sensor. I've only fitted genuine units after a problem with a BMW e46.
I did have a fault with an Audi A8 showing the low coolant symbol which turned out to be the instrument cluster at fault so I wouldn't rule that out either.
