I've stayed in Vegas three times to run mountain marathons from Mt Charleston. I've also no interest in gambling. The Grand Canyon was very good but Death Valley was mind blowing I booked a trip via Get Your Guide. The show by Darren Arenofsky (?) in The Sphere was also great The Big Wheel is good. Finally for a restaurant recommendation - dress up a bit and go to Pieros, classic old school Italian.
