Spiritfarer - Weird little indie where you help spirits move to the afterlife. Meditative, lovely, wistful thing.
Citizen Sleeper - Like a tabletop game, or a 'choose your own adventure' book. Lovely, short indie, with a really involving story.
This War Of Mine - Adaptation of an iPad game that I didn't like on iPad, but played a lot on Xbox. Resource management in a war-torn city. One playthrough one of my characters committed suicide. Heavy!
State of Decay 2 - Bit clunky and buggy, but good, expansive RPG where you play as several different survivors.
Mass Effect Legendary Collection - One of the greatest RPGs ever made. First one is a little clunky, but second is great and the third a classic.
Like Col says, you can dip into any and see if they're for you. As I'm skint, I can't 'gamble' on a game I'll not get my money's worth, but with Game Pass I can give them a whirl.

Outriders - starts a bit slow, but great fun shooter, you can adjust the difficulty on the fly to suit you
Doom and Doom Eternal - prepare to have your brain melted
The Ascent - decent top down shooter
Overcooked 2 - multiplayer and awesome (not so awesome single player)
No Mans Sky - space fun
I've heard good things about, Outer Wilds and Tunic too
The cool thing is, so many games - give something half an hour or so, if it aint for you - move on.
