I spoke to your Wife and Kids, and...

My biggest "problem" with 200-scale is: just as you're enjoying the ease of detailing - your oxygen bottles, Mk51 Directors, molded antennas, etc. - you can't help but start thinking how much more detailing of "1/700-size" could be added. Like the ammo racks (might as well include individual rounds, right?) for your 40mm tubs. And, those Mk51s really could use lenses, couldn't they ...so where does it end?
And that can go for the paint job, too: I remember, on that 240-scale LST I built, I was detailing the "salt-line" on the bottom of each LCVP - and suddenly realized I was trying to depict individual clumps of barnacles!
So I basically only like subs for 200-scale: they are usually so sleek that few interesting details can be shown, except at this (or larger) size. And the older ones (in particular), can be quite small, to begin with. But even then, some subs - like the S-class boat I'm (procrastinating in) building - already have a helluva lot of little details - amost too much!
In any case, that Big Mo certainly does look like an excellent kit, Don. When finished, I want to get a ride in it, too! Happy Birthday and congratulations, buddy!
And "pre-emptive" congrats also on your Big New Home - which you're going to have to get, in order to display that monster.
