We're still favourites to go down 4/7
    Forest are 15/8.....

Now, if I had a spare Bob or two...
    Everton are 11/2

And bookies usually get it right ??*

    Here's hoping eh!

Bookies work on bets already laid out. So a combination of expectations, history, fan base, etc.
So sometimes they have odds that are not right. Get your pennies on. Before Everton lose another game.

This season's relegation market has the added factor of not knowing what the Premier League and the appeals will do. Therefore the odds put up by bookies are a bit more 'guessy' than usual. Sometimes that means there may be some value in prices. Or the bookies just shorten everything up with the hope of not laying any big bets.

Would an appeal come into it with a bet with everton ?

I've not been following too closely the ins-and-outs of the appeal process. But if, for example, Everton finish 18th but an appeal gives them a point back taking them to 17th. Is there a possibility of that happening?

If they finish 18th, it's nailed on that they will get as many points back they need to finish 17th
