Thinking of getting one of these as a present but I've literally no idea what I'm doing or what things I should be looking for, or to avoid. What can collective outlaws wisdom inform me of I wonder?
Flexible budget but I don't have silly money to throw at this.

You should be able to get one that "does the job " for about 30-40. Simple one that will plug into the 12v port.

That will record it 1080 with a relatively wide field of view.

If you want to go top end then front and rear cameras with automatic collision detection can capture a bump even while parked(think they record in the background then save the footage if they detect a bump. They will also have ANPR in them so if its a hit and run it will have scanned he registrations involved.

Some will also capture nigh scenes better. But for normal use the basic ones should be fine - they will record and most times you will need one will be from an accident visible from the front (this will show if you changed lanes, or if someone has cut you up etc. Main use for them will be roundabout and lane change incidents so the front view will be fine for these

          God is all-seeing.

          God is your witness.

Why do you need a dash cam?
