For what my opinion is worth, the deadliest chokes I've ever used for upland hunting are cylinder right and skeet left; and I've had several of my doubles opened to those chokes. For dove shooting I prefer improved cylinder and modified, but one of the most effective dove guns I ever used was choked cylinder and full. As was suggested, patterning your gun with the loads and shot sizes you typically use will tell you what you need to know. My experience with old doubles, which were patterned with less efficient cardboard wads and lacking plastic shot cups, is that they will produce tighter patterns with shells loaded with modern components/shot cups. So again, be sure to pattern your gun prior to doing anything; and you'll also find that patterns can be adjusted to some degree by using different shell brands, and/or modifying charges if you hand load. If all that fails, then you have the option of installing screw-in chokes or having a gun smith swage choke your barrels.
