Cube one can of Spam, cut up some onions, celery, bell pepper and carrots (or any combo thereof.) Lightly coat the bottom of a medium frying pan with oil (just enough to barely cover the bottom) and allow it to get hot. Add chopped Spam and veggies and stir fry for a few minutes on medium heat. Add 1 1/2 cups of chicken broth, reduce heat to low and let simmer for 10-15 minutes or so. Spoon over individually plated servings of rice or pasta with a side salad if desired, and garlic bread. Spam is the 'old-but-new - goes with anything' meat that is both simple to cook and very cost friendly and, most of all, easy-peasy to cook. It is also now "all the rage." You can even go "Top Chef" if you like and majorly impress by adding a sunny-side-up or poached egg to the top of each plate served.
P.S. I suppose you could also serve over grits or potatoes if you prefer. You could also substitute cheese for the egg. Just "let yourself go!" It's SPAM!
