Love Carcassonne, such a great place to visit.
Spent a week eating outstanding bread, salami and cheese; used to get up early and queue with the locals at an ace bakery then head to the ( superb ) market. Throw in the odd duck cassoulet and you are in business. Great value wine abounds in the Languedoc.
Preferred the old town to the castle but the whole place is marvellous.
