Today I made 5 jars of pickled zucchini, summer squash, and red onion. They're refrigerator pickles and keep for about a month. The recipe is unusual---it uses a lot of cumin, ginger, garlic, and dill. The brine is honey, apple cider vinegar, salt, and water. I've used the recipe before with carrots but not with summer squash. The carrots were delicious. We'll see whether the squash works!
