What is known is HP's range of (mainly) ship kits is prolific and probably larger and more varied than any other 1/700 resin producer. HP also make various accessories such a vehicles (great for deck cargo), aircraft and Alantic Wall gun emplacements, amongst a lot of other bits and pieces.
I have a few of their kits such as early RN carriers and cargo ships and Hilfskreuzers which are not produced by anyone else, in range anyway. They do not include any decals or photo etch and often exclude masts but instead with dimensions to scratch build, and the quality of the resin and castings is very good if not excellent. The a/c in the carrier kits are old tech and could do with replacing though.
You can see a small range of their products on the auction sites though many of them are subs from both WW I &II, really interesting surface ships from both wars and modern rarely come up as of late and are usually priced well over $100 and sometimes much higher but usually always sell.
The only help I can give to see what's available that's hard to find presently, is this Worthpoint site. It lists items sold online and if you sign up to it gives the date and final sale price, otherwise only the original listing with no data, but it's a kind of catalogue at least though a lot of kits are repeated. Just type in HP Models 1/700 and you'll be able to go through about 70 pages with a lot of models I've never seen for sale before. Site can be used for anything else as well.

I know about Scalemates & Rajendra/Modeler Joes lists and while good, neither is 100% complete, my question - does anyone have a complete list of HP Models kits? Or know where one might be online?
