According to Theo Ballance et al The Squadrons and Units of the Fleet Air Arm
(Tonbridge: Air-Britain 2016), Fiji was allocated Walrus I serial P5710 of 700 Squadron (though it doesn't state that it was embarked). I've seen no photos of her showing an aircraft embarked; indeed in a photo captioned as May 1941 (NMM Ref N31638 - obviously outside the timescale you asked about), taken from nearly ninety degrees on her starboard beam, there appears to be daylight visible through where the catapult should be. Admittedly that doesn't preclude an aircraft being carried with no catapult, but it would be most unusual.
There is a small dispute in progress as to whether the ship actually embarked an aircraft at any time in 1940.
Does anybody know the answer.
I am aware that Fiji ran sea trials in April 1940 without the catapult.
