I'm never quite sure of my draft picks. We're only an eight team league, and my family doesn't always follow exactly with the "cheat sheet." I go through the predictions, too, and wonder how Dalvin Cook (recovering from some kind of ligament damage or ACL tear) is the 9th best RB in fantasy. You can read the projections and see what they were thinking (IF he plays a whole season, he started out last year well, and even his replacements were near the top 15 or the top 20).
I'll try to go by rounds (not sure I wrote the players in that order, though):
st) Kareem Hunt, RB1, Chiefs: He led the league in rushing yards last season (which took less than 1,400 yards somehow). I think he made the most of catching the ball, too (over 400 yards receiving). He was outside the top 10 in "targeting" him for a catch, but if Andy Reid wants him MORE involved in the passing game, isn't that a good sign? They could try to take some pressure off of Mahomes by running a little more.
nd) DeAndre Hopkins, WR1, Texans: I think he had a poor 2016, and I totally overlooked him last year. Then, one cousin ended up with Antonio Brown PLUS DeAndre (and Kareem Hunt fell to about round 11). Last year, I know Deshaun Watson got hurt, and Hopkins was still able to finish as the #1 wide receiver in our scoring system.
rd) Keenan Allen, WR2, Chargers: I've drafted him before, and he got hurt in week 1 (ending his season). I think one of their tight ends is missing the whole year (Hunter Henry), so he could pick up extra "targets"? He's definitely the best WR on their team. Rivers must be my age, but he almost led the NFL in passing yards last season.
th) Jordan Howard, RB2, Bears: I'm not sure if they're all in on Mitch Trubisky at QB this season. Howard was OK to own last season (just kind of frustrating that I didn't have a Gurley, or Le'Veon, or even Kareem). He's not much of a receiver, but he should get to 1,000 yards with 7 to 9 TDs.
th) Cam Newton, QB1, Panthers: I didn't look at their schedule. Remember the Super Bowl year when they were 15-1? They took advantage of a weak division and didn't play many hard teams outside the division/conference. The idea is, Cam usually leads the league in rushing yards by a QB (their regular RBs can barely reach 1,000 yards), so the passing stats are kind of a bonus.
th) Evan Engram, TE1, Giants: I'm not sure if Jimmy Graham was still there, but Green Bay in general doesn't use the tight end very often. I know he currently has a concussion, but I liked his rookie year numbers.
th) LeSean McCoy, RB3, Bills: Why did this guy ever go to the Bills? Was it part of a trade? I know he might be in trouble off the field (found out after drafting him). Plus, he's hit the magic age of 30 when backs start wearing down. I just wanted some more depth for the starters or a really good flex.
th) Allen Robinson, WR3, Bears: I think he was injured last year, but he's had one really good fantasy season in the past. ESPN put him this high since he's the only big name on the Bears.
th) Andrew Luck, QB2, Colts: How did he drop this far? I've heard rumors about a weak offensive line, or can he play at the speed of the game (a lot of time missed)? Could him and Newton both struggle in the same year, though?
th) Jaguars Defense/Special Teams: I think my cousin dropped them last year because of the bye week, so I was like, thanks for the gift. It's strange to think of them as an elite defense, but I think they had the most TDs, were second in yards allowed, and then top three in takeaways (I forget the sack numbers). Defense is a little hard to figure out from year to year, but who is the best team in their division? The Titans and Texans are usually average each year.
th) Royce Freeman, RB4, Broncos: My uncle kept asking, "Who is Royce Freeman?" I think he could be this year's Kareem Hunt.
th) Jarvis Landry, WR3, Browns: In Miami, I think he'd be a starter on most fantasy teams. The Browns might be decent this year. We don't have a scoring system that rewards catches, so that seems like it might affect him more than some other receivers.
th) Wil Lutz, K, Saints: People keep taking "my" guy Justin Tucker!!! I think the Saints scored a pretty high number of points last year. They just had a different ratio of passing and rushing TDs (really low pass TDs by Drew Brees).
th) Chargers Defense/Special Teams: I usually pick two of them with different bye weeks, to avoid all the waiver wire stuff during the season. My uncle asked me to name one defensive player. Good point. I remembered Joey Bosa and Melvin Ingram once I saw them on the depth chart.
th) Charles Clay, TE2, Bills: I don't know if he'll be any good, but you definitely need a second tight end for your starter's bye week.
th) Sammy Watkins, WR5, Chiefs: Between him, and Tyreek Hill, Travis Kelce, Kareem Hunt, shouldn't the Chiefs be great on offense? He usually gets injured, though, and Mahomes is only in his second year.
One thing I rarely do (it would probably take too long) is to compare from year to year where ESPN projected someone and then his actual stats. Antonio Brown is probably the most consistent player at any position (rarely injured, too). Otherwise, it feels like you're guessing! I think Tood Gurley should play well again, and David Johnson's injury was to his wrist instead of his legs. I skipped over guys like Ezekiel Elliott. Just because he's a Cowboy? Or the rumors of beating a woman? He's also not that active in the passing game, on a team that just lost Jason Witten and Dez Bryant (although, could that mean running the ball more?). I don't know if Saquon Barkley was rated correctly. There are just a bunch of variables to this game. I mean, Adrian Peterson and Vernon Davis are still playing, but they're not expected to have Pro Bowl statistics.
I wanted to maybe try drafting a PPR team in a public league that's a little bigger (12 teams?). I haven't tried to figure out those rankings, though.
