My friend John Shelton Reed of North Carolina has asked a small group of his friends to recognize all those barbeque houses that still cook with real wood or with charcoal. He calls it “True ‘Cue” and in South Carolina Jim Roller has taken on the task of visiting these fine establishments and presenting them with a framed certificate plus a sticker they can put on their windows to alert folks that the old ways are still being honored.
Below is a list that Jim has compiled. Please let us know if you know of any more places that should be on this list and honored. The only criterion is that they use real wood or charcoal as their only source of heat.
