Most of the teams that cook regularly use basically the same kind of sauce. Almost every time one of us tries a vinegar and pepper or a mustard based sauce we get scalded by the judges. Very few of us like what we turn in but we turn in what we hope will give us a good score. Showing up and cooking a contest is expensive for a team and we can't afford to throw it all away trying something that we feel pretty sure will get us a low score. Back before money muscles and tubes were discovered a team could turn in a box of pulled pork with their family sauce mixed in and win first place, not anymore. Previous Message

We always talk about the different parts of the state and different sauces. I judge mainly in the low country. But if you could pick 3 teams from the low country to compete against 3 teams from the upstate who would they be? Just wondering because as a judge I don’t see a lot of the teams.
