She always insisted on Hellman's mayo so I use it also.
This is as she wrote it down.
I use the bagged cabbage coleslaw mix and chop it up a little more. Steve and some other guys like this quite well. It is kind of sweet and sour.
1/2 head of cabbage, grated
1 grated carrot
celery seed, 1/2 tsp.
salt, 1/2 tsp.
1/4 cup sugar
3 to 4 capfuls of vinegar
Add all ingredients together. Blend in about 1 Tbsp. mayo to moisten.
I have my aunt's potato salad recipe that has potatoes, boiled eggs, celery, I think but can't remember if onion is in there, salt and pepper.
No pickle at all, and only mayo is used, so it is kind of different but a good flavor. But I never make it because of all the chopping. When I did take it a few times it was really a hit for some reason. We always hoped for some to take home but it was all gone. It made a huge amount, something like five pounds of potatoes, a dozen boiled eggs, a ton of celery and mayo to moisten well. I cut it in half. I think it was like five or six potatoes instead of a whole bag and half the eggs. The celery was guess work. It has been years since I made it. I guess because I never buy celery and hate chopping the stuff.
