Jdg, I normally HATE meatloaf and never thought I would be able to make it so I cheat...lol
You can buy Meatloaf already mixed up at Chionko's... I then take it home put it in a pan with a couple cans of diced tomatoes w/green chilies poured over the top and of course the juice will be all around it in the pan and bake it for about 45 minutes. About every 15 minutes I get it out and pour the juice from the pan back over the top of the meat and stick it back in.
My husband likes for me to put sliced green and red peppers on top about 10 minutes before it is done...
So Yummy!!!! You should try it, it is SUPER easy and tastes wonderful!
