Prime the pump any way you want but don't let static timing put you off. It is not hard to do.
Pulling the relief valve will tell you that some oil is in the system. However, I prefer Glen's suggestion to look for oil to be escaping on the top end. If I remember correctly the plug he is talking about looks like a 5/16-24 hex head bolt installed horizontally on the back of the cylinder head. It's really easy to get to and remove... easier in fact than the relief valve.
If you want to crank the engine over on the starter to build pressure, make it easier on the starter by removing the spark plugs first.
Getting the pressure switch out to install a mechanical gauge is not hard. I would go ahead and install a gauge for the initial startup. You can go back to the switch later anytime you want.
Also, make sure the correct wire (white/brown) is on the pressure switch.

Would it work if I checked to see if the oil is pumping if I removed the oil bypass valve assembly from the side of the block, instead of the oil plug at rear of the head as you describe? That seems like an easier job.
Hopefully I didn't run the engine too long - - I started it twice but shut off as soon as I saw the idiot light come on. But I did turn it over a couple of times with coil disconnected, for maybe as much as 30 seconds using the starter motor alone.
