At first they reminded me a lot of poison hemlock, but PH's leaves are
a bit more sharply incised.

It's Queen Anne's Lace aka "wild carrot" which does resemble hemlock >>

but the stems are "hairy" instead of smooth. That's how you know it's safe. The white flowers resemble hemlock as well, so it's always good to check for hairy stems to be sure. It's one of my favorite flowers and my mom and I are so happy that the last several years it has grown in one of our grass banks. We harvest the seeds every fall and try to get it to grow in some of our other beds, too because we love it so much.

QAL leafs and flowers quite a bit later than poison hemlock.

Young QAL roots are quite tasty, but they get woody pretty fast.
If the root doesn't have that distinctive carrot aroma, leave it alone!
Have you ever used the seeds for seasoning? They're supposed to be pretty decent.
The leaves are also loaded with potassium (the bitter flavor)
