I tried poutine about a year ago - it is a dish of french fries and cheese curds topped with a hot brown gravy. It was invented in Quebec in the late 1950s and is now considered by many to be the national dish of Canada. I made a simple version of poutine - french fries covered with shredded mozzarella cheese and microwaved. I absolutely loved it!
