I live in south florida so I'm applying to Nova. I did not want to take the MCAT so most of the other schools were out.
I have: 3.45 GPA 3.61 Science GPA 100 hours volunteering with hospice 72 hours hospice grief camp volunteer 100+ hours medical shadowing 20 hours anesthesia shadowing
GRE Scores 157 Verbal 159 Quant
What do you guys feel are my chances of getting in? I've been in communication with one of the admissions counselors for like 4-5 months now at this point and we talk at least once to twice a month. I keep her updated on my progress and when I'm submitting my application.

Your science GPA seems much higher than your overall, I'm assuming that means you had a rough start and fixed your grades towards the end of undergrad.
If so, that will be an easy thing for you to discuss at the interview.
Even if that isn't the case, that GPA isn't terrible, and it was made clear to me when I applied that a GPA at that level or even lower can easily beat out a higher one if they have strong stats and present themselves well in the interview.
Your other stats are solid, and I'm sure you can get an interview. I worked very closely with an advisor at Nova when I applied and he made my application much stronger. Are you applying to both Nova campuses?
Yes, I was told I should absolutely apply to both, increase my chances. I live in Delray, 30 minutes away from the Ft Lauderdale campus, so ideally I want to go there.
And yes, I'm 27, I had a rough start right out of high school, wasn't mature or ready for college and too much partying. So much more dedicated and focused now. My overall GPA at FAU is an 3.80 currently, and I've taken over 70 credits at FAU, so I think that should speak volumes.
I definitely would encourage you to apply to both campuses. I only applied to the Tampa campus and even though I made it in, it was much more stressful knowing I didn't maximize my chances.
I assumed that's what the GPA difference was from, and I fully believe you can easily get an interview with that. I apologize if my first comment seemed more negative about it than that. All I meant was that, since it is the case, you can easily explain that in an interview and it will look good that you already have recognized faults in your previous study habits and now have the improved habits you will need to thrive in the program.
Include any leadership positions you have had on your resume. Whether that was tutoring students in undergrad, post grad, etc.
Also, Nova is a nonprofit University that has been recognized for community outreach, so make sure your volunteering is on the resume as well. I see you already listed two things with large hours (which is very good), but if you've done other non-medical volunteering as well, put that in there too.
I wish you good luck on gaining and interview, and if you come to Tampa, maybe we'll meet. Overall, I think you have a good shot!
