Taking a break after graduation

Is it possible to take a year off after graduating from AA school to do something like thru-hiking the Appalachian Trail or would any potential job opportunities turn you down if you did that because your skills might have slacked over that time that you weren't practicing?

A year? That's a little extreme...Typically you'll have 6-8 weeks off between graduation and starting work, is that not enough for you?

I was thinking of hiking the Appalachian trail or pacific crest trail but yeah your probably right.
