Sid- First, I would STRONGLY suggest that you take your "hard sciences" classes in person. Online, if accredited, would not provide a strong background/knowledge, especially in labs.
Also, instead of the GMAT, Nova (and the others)accept only the MCAT or the GRE.
I'm not sure about the pre-req class in the spring since they would have already interviewed and accepted you.
As per volunteering, the hospitals always need them. On the weekends, at least in my area, the hospitals slow down since no surgeon or other docs want to work weekends, so that may be tough. I know that there is always jobs for patient food services, which would provide you with lots of patient contact/interaction.
