I get a lot of what you are saying, but some of it still puzzles me. The sugar in the corn stalks should promote better fermentation rather than allowing them to be slower at the process. Certainly the fiber does "keep things moving" inside any animal, including humans.
I have never heard of calcium in alfalfa being a problem. Protein is the only issue I have heard discussed. If calcium was an issue, wouldn't milk be an issue?
Even with the various grass hays, I think there is an element of nutrition that may exist in some hay that the people using them don't even know about. I now live in NC where there is a fair amount of so called coastal grass hay. I see them advertised with the nutritional analysis provided. Some of them actually have protein almost as high as some alfalfa. I haven't compared the other nutrients since I have never felt inclined to lean on grass as a good source.
