1. one 2-4 lb filet of salmon/rainbow, lightly covered in lemon pepper. 2. A piece of Aluminum foil, long enough to fold in half to cover both sides of fish and seal all round.3. Spray bottom side of foil with pam, add 1/4 inch thick slices of onion to cover same area as fish, lay fish on top, cover with 1/4 inch thick slices of tomatoe. 4. Add a couple of dollops of butter on top, fold over and seal aluminum foil all round. 5. Place in BBQ medium heat for about 35-45 mins, or oven for 35 mins at 325 degrees. 6. For added flavour, sprinkle a bit of Italian flavoured bread crumbs on fish before tomatoes, or add a couple of real thin slices of mozzerella cheese. (No I'm not Italian). 7. Watch your fingers when opening foil, it's HOT and steamy. I've had quite a few friends ask for this recipe after enjoying mine.
