I keep backstraps for straight up slice'n and pan fryin. I'll take some of the meat to make Deer Jerky. Usually keep some cubed meat around, too, for deer stew. Just sorta depends on size of deer and what mood I'm in when I'm processing.
What y'all do with your deer??? Possum gave me some canned deer meat he makes up, for a pitch in during fall shoot at F'ship, that was damn fine!!
