Serves 4
2 T. extra virgin olive oil
1 small red onion, sliced
3 bell peppers, sliced
2 cloved garlic, minced
1 C. diced tomatoes with juice
1/4 tsp. paprika
1/2 tsp. fresh parsley
1/3 tsp. ground coriander
1/8 tsp. crushed red pepper
salt and black pepper to taste
1 lb, peeled, deveined, tail on shrimp
feta cheese for garnish
In a large cast iron skillet heat oil and saute onion, peppers and garlic for 5-7 minutes.
Add diced tomatoes and all the spices. Toss well to combine.
Season the shrimp with salt and pepper then add to the skillet and cook 5-7 minutes or until shrimp become pink. Turn off heat and sprinkle with crumbled Feta.
Serve with a side dish such as a green salad, rice, quinoa or cauliflower rice.
