This recipe helped me increase my protein and veggie intake with easy ingredients that come together in under 25 minutes!
(Makes a BIG pot too, helloooo leftovers)
Ingredients:
+2 lbs of lean ground beef
+28oz can of crushed tomatoes
+15oz can of diced tomatoes and green chilies
+15oz can of corn
+15oz can of black beans
+15oz can of pinto beans
+2 12oz bags of frozen bell peppers & onions**
+2 packets of taco seasoning
Optional:
+1 packet of ranch seasoning
+1 cup of Greek yogurt (can be dairy free)
+8oz of cream cheese (can be dairy free)
Directions:
1. In a large pot brown the ground beef
2. Add all the canned ingredients and seasoning packets. Stir to combine and then bring to a boil.
3. Add the frozen vegetables and reduce down to a simmer. Cook until the veggies are tender, about 8 minutes.
4. Reduce the heat to low, or turn off if serving immediately. (Optional: Then add in the yogurt and cream cheese and stir until melted into the soup).
5 Garnish as you wish with jalapeņos, crushed tortilla chips, shredded cheese, or cilantro!
** or 1&1/2C each of fresh diced onion and diced green pepper
