2 Large potatoes, peeled and sliced like
matchsticks
1 cup, Mozzarella (grated)
2/3 cup Real bacon bits
4 Green onions (chopped)
1/2 cup Egg whites (4 egg whites)
3/4 cup Flour
1 tsp Salt
1 tsp Pepper black
Put the sliced potatoe in a bowl and cover with ice water; let sit for about 20 min. Drain potatoes and pat dry. Return to bowl and add the cheese, bacon bits, flour, egg whites, pinch of salt and pepper and the green onion. Mix together with your hands. Make small flat patties of the mixture and put in pan with heated oil.
Fry in vegetable oil on medium for 5 min per side or until crispy.
Served with Ketchup, sour cream or mayo.
