2 lbs bacon, chopped, and cooked until crispy
8 eggs
2 cups milk
Salt to taste
Pepper to taste
Crushed red pepper to taste
3 tbsp (or 1 packet) ranch seasoning
32 oz bag frozen tater tots
2 cups shredded monterey jack cheese
Preheat your oven to 350°, and grease a 9X13 baking dish.
In a bowl, combine the eggs, milk, and all the seasonings, and whisk well.
To the prepared baking dish combine the frozen tater tots, cheese, and bacon. Mix them really well until evenly distributed. Then pour the egg and milk mixture over the top.
Bake for 50 minutes or until the eggs are completely set. ENJOY!
If freezing, I prefer an aluminum baking dish, place it on top of a baking sheet while baking so it’s less flimsy. Once cooled Wrap with well with foil or plastic wrap and freeze. I like to put this in the fridge 1-2 days before Christmas morning to thaw. To reheat, just throw it back in the oven with the foil on top at 350° until warmed through.
