Y’all this is my favorite breakfast cake! It’s really easy to make and the brown sugar pecans are so good!
Crumb:
* 8 tbsp unsalted butter, softened
* 3/4 cup flour
* 1 1/2 cup light brown sugar
* 1 tbsp ground cinnamon
Pecan topping:
* 1 1/4 cup chopped pecans
* 1/2 cup dark brown sugar
* 1/2 tbsp cinnamon
* 5 tbsp unsalted butter, melted
* 1 tbsp maple syrup
Cake:
* 3 ripe bananas, mashed
* 2 cups flour
* 3 tsp baking powder
* 1 1/2 tsp ground cinnamon
* 1/2 tsp salt
* 8 tbsp unsalted butter, softened
* 1 cup granulated sugar
* 2 large eggs, room temp
* 1 1/2 tsp vanilla
* 1 cup buttermilk or whole milk
Icing:
* 1/2 cup powder sugar
* 2 tbsp maple syrup
* 1 tbsp milk
Instructions:
1. Preheat oven to 350° F. Grease sides of a 9x9 or 9x13 baking dish. Place parchment paper on the bottom and grease well.
2. Make crumb by combining all ingredients and forking in the softened butter, set aside. Make pecan mixture by combining all ingredients and set aside.
3. Mash 3 bananas in a medium bowl and set side.
4. Combine flour, baking powder, cinnamon and salt in one bowl and set aside.
5. Using a stand mixer or hand held mixer beat butter for a couple minutes till fluffy. Add in sugar and continue to beat till combine. Add in eggs and vanilla extract. Add in mashed bananas.
6. Slowly add in dry ingredients and milk alternating a little at a time till it’s fully combine.
7. Pour your pecans at the bottom of the dish first. Sprinkle some of the crumb on top of the pecans. Pour in half of the batter. Sprinkle more crumb. Pour remaining batter and lightly sprinkle remaining crumb.
8. Bake for 45-50 minutes till golden brown! Let cool for 10-15 minutes. Flip baking dish on cooling rack. Pecans will be right side up! If any fell off you can place back on.
9. Combine icing ingredients in a small bowl. Drizzle over cake, cut and enjoy!
