Makes 8-10 slices
In a bowl add 3 mashed overripe bananas,
1 tsp vanilla extract,
200ml ‘buttermilk’ (200ml soy milk mixed with 1 tsp vinegar and leave to sit for 5 mins),
1/3 cup neutral oil (vegetable or sunflower),
1/3 cup maple syrup,
1/3 cup tahini.
Mix well.
Add 200g plain flour,
1/2 cup cocoa powder,
1 tsp baking powder,
1/2 tsp bicarbonate soda,
1 tsp cinnamon.
Mix well.
Add to a lined baking loaf tin and top with chocolate chips. Bake for 45-50 mins at 270 degrees Celsius. Serve with tahini and cinnamon.
