I rarely make a statement of “Best” anything. Because I feel thats such a bold statement. But these cookies really ticks all the boxes, sweet, salty, crunchy, chewy & so satisfying.
Ingredients
2 ¼ cup 1.1 GF flour
1 tsp baking soda
1 tsp kosher salt
¾ cup light brown sugar, packed
⅓ cup granulated sugar
1 cup butter
2 tsp vanilla extract
3 tbsp creamy peanut butter
2 eggs
1 ½ cups chocolate chips (I like to mix dark & milk)
2 cups dark chocolate
Add the butter to a small stock pot & place over med/low heat. Cook for 10ish minutes until light golden brown. (if using dairy free butter make sure to keep an eye on the butter-it can burn easily). Remove, cool partially. In a mixing bowl add the sugars & butter. Mix for 3 minutes. Mix in the eggs one a time, peanut butter, the vanilla & then the dry ingredients. Mix in the 1 ½ cups of chocolate chips. Set aside for 30 mins to allow ingredients to setup. Preheat the oven to 375 degrees. Line 3 cookie sheets with parchment paper, scoop equal size cookies, leaving 2” of space. Bake for 9-11 minutes, edges should be golden brown, inside sunken some. Remove, let sit on sheets for 5 mins, then place on a cooling rack. Once cool, melt the dark chocolate, with a spatula spread the chocolate on the bottom of the cookie. Place on a parchment paper lined cookie sheet. Place in the fridge for 30 mins to set & enjoy!
