This will always be one of my all time favorite comforting combinations - cinnamon and sugar combine with butter and flour to make a little sugary crunch layered throughout a lightly sweetened bread.

Bread:
2 tsp vanilla extract
1/3 cup melted butter, cooled
3/4 cup granulated sugar
1 cup room temperature milk
2 cup all purpose flour
1 tbsp cornstarch
1 tsp baking powder
1/2 tsp salt

Cinnamon Filling/Coating:
1/3 cup all purpose flour
6 tbsp granulated sugar
1 tbsp ground cinnamon, heaping
2 tbsp vegan butter, room temp

Instructions:
Preheat your oven to 350 degrees F. Line a loaf tin (8x4) with parchment paper or spray with cooking spray and set it aside.
Whisk together the melted butter and granulated sugar. Whisk in the rest of the wet ingredients until well combined.
Using a spatula or wooden spoon, fold in the remaining bread ingredients. Set it aside.
In a small bowl, using your hands, combine the cinnamon filling/coating ingredients. It should resemble a dry crumble.
Pour half of the batter into your prepared bread pan. Pour half of the cinnamon mixture onto the batter and using a knife or a toothpick, swirl the batter and cinnamon mixture around.
Repeat with the remaining batter and cinnamon mixture making sure to really swirl the two together.
Bake for 55 minutes and let the bed cool completely before slicing.
