CAROL’S HASH BROWN BACON CHEDDAR ‘QUICHE’
6-8 hash brown patties (Cavendish or M&M Market)
6 slices crisp bacon, chopped in pieces
1 cup grated reduced fat cheddar or your choice*
8 x-large eggs
1/2 cup 1% milk
1/2 cup 1/2 Fat Hellman’s Mayo
1/4 tsp onion powder
1/8 tsp each salt and pepper
Garnish
1 1/2 T Kraft Fat Reduced Parmesan Cheese
Preheat oven to 375*
Pam spray an 11x7 dish
Thaw patties in microwave, press out any moisture. Lay on bottom of pan cutting and piecing to fit.
Bake for 15-20 minutes until lightly browned. Remove from oven and cool for 15 minutes, longer if using glass pan.
Sprinkle chopped bacon over patties, then sprinkle on grated cheese.
Put eggs in a large bowl, add remaining ingredients except for the Parmesan.
With immersion blender or wire whisk, beat egg mixture until smooth.
Pour carefully over cheese and bacon.
Sprinkle the Parmesan over top.
Bake at 375 for 30 minute or until knife inserted in centre comes out clean. Cover with foil if browning too much.
Remove from oven, let rest for 10 minutes before cutting.
Yield 6-8 servings
