Pastry:
1 cup Butter
1/2 cup Sugar
2 cups Flour
Filling:
1 & 1/2 cup Sugar
1/4 cup Flour
4 Eggs
2 Lemons juiced
Preheat oven to 350F
Mix butter, 2 cups of flour and 1/4 cup sugar until well blended. Press into bottom of ungreased 9x13 pan and bake for 15-20 minutes.
Whisk 1 & 1/2 cups sugar and 1/4 cup flour together, whisk in eggs and lemons. Pour over baked crust and bake for an additional 20 minutes. Lemon mixture will firm up as it cools.
Cut into squares and sift icing sugar over the bars.
Mmmmmm, lovely little bars of tart sunshine.
